Recipe: Lemon Cheesecake Quest Bar Cups

Do you ever have cravings for a healthy snack that contains protein and that doesn’t make you feel guilty after eating it? I wanted to make a raw cheesecake for a while now, but I also wanted to use quest bars because since I’m a runner, I could use the extra protein from protein bars. I decided to combine the two things I wanted to make and what you see in the picture is the result of it! 😉


3 quest bars (I used Chocolate Chip Cookie Dough, Chocolate Brownie & Lemon Cream Pie)

Lemon filling:
1 cup of almonds
1 cup of cashews
1/4 cup of dried cranberries
1 cup of lemon juice
2/3 cup of agave
1/2 cup of melted coconut oil
2 teaspoons of vanilla extract
zest of 2 lemons
a pinch of sea salt

MUMA seed mix

1.  Put the quest bars in the microwave for 0:45 seconds or until they are soft enough
2. Make little bases out of the quest bars and put them in a cupcake tray
3. Mix all the ingredients of the lemon filling in the blender and put them on top of the quest bar bases
4. Put in the freezer for 2 hours
5. Get the cups out of the freezer and put some MUMA seeds on top
6. Enjoy your healthy snack
